Meatloaf Recipe

This is a very simple, but tasty meatloaf recipe.  Take 2 lbs of regular or lean ground beef, and put it into a large mixing bowl.  Let it warm-up a little on the countertop.  This will make it easier to mix, and less cold on your hands.

Now, add 2 tbsp of chopped garlic, 1/4 cup of chopped white onion.  Add 1 tbsp of Aromat and 1 tbsp of black pepper.  Mix these ingredients together well.

Add  1/4 cup chopped FRESH basil and a few sprigs of chopped fresh parsley, and mix that in.  Take 2 tbsp of dry beef stock and blend that into your meat mixture.

Now, form that entire mixture and put it into your ‘loaf’ pan.  Put it into a pre-heated oven at 350 degrees.  While it is cooking, chop some fresh, white mushrooms and put them into a pan with a little butter and 2 ounces of white wine.  Let that simmer for a bit, and then add 1 can of tomato soup.  After that comes to a boil, add 1 cup of heavy cream.  Let that sauce slow-boil for about 10 minutes, and then remove your loaf pan from the oven, and pour the mushroom sauce into the loaf pan.  

Let the meatloaf  and sauce cook for about another 20 minutes.  Now, remove the meat from the loaf pan, and let the sauce remain.  Let the meat cool a little on a cutting board while you ‘reduce’ your sauce.  Put the loaf pan, with the sauce in it, cook on medium-high heat on your stove top.  This process removes liquid from the sauce, which makes the sauce thicken. 

When you feel that your sauce is thick enough, cut our meatloaf into serving-size portions, and then pour your sauce over the top.
